In the lush Toledo District of Belize, Finca Chocolat cultivates premium Trinitario and Melonato cacao through regenerative agroforestry. Our beans showcase distinct notes of rich chocolate, delicate flowers, and dried fruits – a direct result of our meticulous fermentation in wooden boxes and careful solar drying process.
From December through June, we harvest and process our cacao in our central fermentary, where traditional methods meet modern standards. The unique tropical microclimate, with its natural wet and dry seasons, creates ideal conditions for developing the complex flavor profiles that have made our beans sought-after by premium chocolate makers worldwide.
