Outside Guayaquil, Ecuador, cacao producers are doing something genuinely exciting. Led by microbiologist Vicente Norero, the Camino Verde fermentory applies a level of scientific rigor to cacao fermentation that most producers never attempt, coaxing warm, spiced, floral character out of single-variety Nacional beans with a precision that feels more like alchemy than agriculture.

At 70%, this single-origin bean-to-bar bar opens with the comfort of cinnamon roll and almond butter before giving way to sweet florals that linger in a way that makes you want to go back for another square. Balanced and quietly complex, it's the kind of craft chocolate that earns its place in your rotation. Roasted and made from scratch in our Bend, Oregon roastery.
