Description

A summery, cherry chocolate chip cookie skillet recipe to add to your dessert rotation this month. Perfect to bring as a party favor, dessert prepping for family, or a mid-week indulgence. This cherry chocolate chip cookie skillet is gooey in the middle, crisp around the edges, and loaded with dark chocolate and juicy cherries. Best served warm with a scoop of vanilla ice cream melting right into the middle.

INGREDIENTS


  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1tsp baking soda
  • small pinch of salt
  • 2 eggs 
  • 1/3 cup extra virgin olive oil
  • 1 cup light brown sugar, packed
  • 2/3 cup almond butter
  • 1 Colombia La Cueva del Oso 70% Chocolate bar
  • 1/2 cup dark cherries, pitted and halved

preparation


  1. Preheat your oven to 350° 
  2. In a mixing bowl, mix the olive oil, brown sugar, almond butter, and eggs until well combined. Set aside.
  3. In a separate mixing bowl, combine oats, all-purpose flour, and baking soda. 
  4. Add wet ingredients to the dry ingredients and mix until well combined. Once combined, fold in Colombia La Cueva del Oso and cherries.
  5. Spread batter evenly into a well-greased cast-iron skillet. sprinkle with flakey sea salt and bake for 25-27 minutes. 
  6. Serve with a scoop of vanilla ice cream and dig in!
