Sometimes we just crave something new. Like when the top 100 all starts to blur together, so you flip the station looking for a track that actually surprises you. That's the feeling behind our award-winning Left of the Dial bar, 78% dark chocolate made with a blend of responsibly sourced cocoa from Belize and Dominican Republic.

Blending cacao is a craft tradition with deep roots, the same creative logic that drives winemakers to combine varietals and coffee roasters to develop house blends: not because single origins aren't exceptional, but because sometimes two things together become something neither could be alone. We source, roast, blend, conch, and temper every batch ourselves in our Bend, Oregon roastery, combining responsibly sourced cacao from Belize and the Dominican Republic into a 78% dark chocolate with a flavor profile you won't find anywhere else.

Rich and complex, with notes of hazelnut spread and black cherry that give way to a bright finish of lemon zest. It's the kind of bean-to-bar craft chocolate that makes you stop mid-square and reconsider what you thought you knew about dark chocolate.
